Buying a commercial slushy machine is a different decision than picking up a countertop unit for the kitchen. You're buying a piece of equipment that has to survive daily service, hold product safely for hours, and pay for itself in cups sold. Here's what I'd actually look at, in order of how much it matters.
Tank count decides what your menu can do
A single-tank machine locks you into one flavor at one temperature. That's fine for a kiosk with one signature drink, but the moment you want a frozen margarita next to a kids' fruit slush, you need independent tanks. Two is workable. Three is the sweet spot for most bars and snack counters, because it lets you run a premium drink, a crowd pleaser, and a seasonal rotation at the same time without ever swapping product mid-shift.
Independence matters as much as the count. Each tank should hold its own temperature and its own mode, so you can shut down a tank during slow hours instead of freezing product nobody's buying.
Capacity: think in cups per batch, not liters
Spec sheets talk in liters, but your counter thinks in cups. A 15L tank works out to roughly 60 standard cups, so a triple 15L machine holds about 180 cups per batch across 45 liters. For context, that's a full youth soccer tournament or a solid Friday night at a neighborhood bar without a single refill. If your rush is shorter or smaller, a smaller machine saves you money and counter space. Be realistic about your actual line.
Temperature range is what separates margarita machines from slush machines
This is the spec most first-time buyers miss. Alcohol lowers the freezing point of a mix, so a machine that only reaches typical slush temperatures will serve you a cold margarita soup, not a frozen one. If frozen cocktails are anywhere in your plan, look for a low end around 14°F (-10°C). A wide range, something like 14°F to 50°F, also means the same machine can hold plain chilled drinks in the off season instead of sitting unplugged.
One related rule of thumb: keep mixes around 13% sugar and under 13% alcohol. Sugar and alcohol both affect how a mix freezes, and staying in that window is what gives you the right texture instead of ice blocks or soup.
Cleaning is a daily cost, not a feature
Whatever machine you buy, someone on your staff will clean it every single night. A one-button auto-clean cycle turns that into a couple of minutes. Tool-free disassembly matters for the deeper weekly clean, because parts that need a screwdriver to remove are parts that stop getting cleaned properly by week three. Ask about both before you buy anything.
Materials tell you how long it will last
The parts that touch product should be food-grade 304 stainless steel, especially the evaporator barrels where the freezing actually happens. A stainless body wipes down fast at closing time. Transparent tanks are worth having for a reason nobody puts on spec sheets: swirling colorful product is the best point-of-sale advertising you can get, and it costs nothing.
Where it ships from matters more than people think
A lot of commercial slush machines at attractive prices ship directly from overseas. That can mean weeks on the water, customs holds, surprise import duties, and a complicated return path if something arrives damaged. A machine that ships from a U.S. warehouse on a pallet gets to you faster, with no import paperwork, and any freight issue gets resolved domestically. For a piece of equipment this size, that difference is worth real money.
Speaking of freight: these machines don't come in a parcel. Expect a scheduled pallet delivery, plan for someone to be on site to receive it, and inspect the unit before signing off with the carrier.
